Navigation Sweet-n-Spicy Flaxmeal Flatbread
  • Ingredients:
  • 2 cups flaxmeal (milled flaxseed)
  • 1 cup sugar or Splenda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • 5 eggs
  • 3/4 cup water
  • 1/3 cup vegetable oil or canola oil


Preheat oven to 350°F. Grease a jelly roll pan or a large cookie pan with raised sides. In a large mixing bowl, thoroughly combine dry ingredients (a wire whisk works well for this). In a small bowl, beat eggs. Add eggs, water, and oil to dry ingredients and mix well. Pour immediately into greased pan and spread to edges. It tends to mound in the middle as it bakes, so you get more even thickness if you spread it away from the center somewhat. Bake for 25 minutes or until it springs back when you touch the top. Let it cool, then cut into whatever size pieces you want (you don't need a sharp knife;a spatula works fine). Store in refrigerator, as it is very moist and can get moldy fast if you don't!
